Grapes of Wrath
Constantly pushing beyond the status quo, we decided to kick off 2015 with something extraordinary.
This very limited edition, barrel-aged Lambic, dubbed “Grapes of Wrath,” is a truly unique, new offering from Devil’s Peak.
“But what’s a Lambic?” you might ask.
A Lambic is a type of beer traditionally brewed in Belgium. What separates it from other beer is a refermentation process that occurs before it’s consumed. Normally, fermentation is carefully controlled by certain strains of brewer’s yeast. In a Lambic, wild yeast and bacteria are introduced to the beer, either in the form of open air cooling of the wort or the addition of fruit or even those in present within the barrel.
Our brewer, JC Steyn, explains how our team went about putting together this unique beer.
“Grapes of Wrath is the 2013 wine beer hybrid that we aged for 7 months on Vin de Paille (straw wine) grape skins. The skins were taken from Mullineux Family Wines after they had pressed the grapes to extract the sugars.”
“These skins had quite a bit of sugars remaining within them which released into the beer. At the same time, naturally occurring yeast and bacteria were busy transforming the flavours of the beer while adding complexity along with acidity in the form of lactic acid. The souring is the byproduct of the bacteria introduced through the grapes.”
“The result is a sour Saison – also known as a Lambic beer. But be warned, this beer isn’t for the feint hearted, but rather for a true beer connoisseur.”
This style of beer is enjoyed all over the world. With its tart, refreshing finish, it’s the perfect treat to enjoy on a hot summer day.
